But I wasn't introduced to mushrooms until I was an adult and by then it was far too late.

There are few culinary pleasures that can match fresh-picked porcini (boletus) or chanterelle mushrooms, sauteed in butter with a pinch of salt.

Your supermarket white mushroom doesn't come close! I also like to saute steamed green beans with sliced shiitake and persley. Mmmm!

As for the magic variety, it disagrees with my stomach, so I go for the lysergic.

By definition, a mushroom is edible.

A similar looking species that is either inedible or outright poisonous is properly called a toadstool.

I hope people don't dislike me because I don't like mushrooms.

Did I mention that I'm afraid of them?

I know it's probably makes no sense.

I tell myself that all mushrooms aren't poisonous, only some of them are. At least that's what I've read.

To tell the truth, I don't have much experience with mushrooms.
Like I said, I didn't even have any experience with mushrooms what so ever when I was growing up.

My parents sheltered me. So it's not really my fault, right?

And I know that people are going to tell me how good mushrooms are.
But I don't know if I can get over my fear of them just because someone tells me it's okay.

What do you suggest I do?

I've never picked mushrooms by myself, only with a friend who grew up doing it. If I had to, however, there are several kinds that I would trust myself to pick: the morel, the chanterelle and the boletus are very distinctive and safe. I've never eaten shiitake yet- I would like to try them some time.

Azizi, I don't think I'd worry about it. But I do have a somewhat related story. I went for 30 odd years saying I don't like cheese. I thought it was slimy and inorganic.

Then one day I took myself to task. As many people there are who LOVE cheeses, where do I come off saying such a thing?

Turned out that the only cheese I don't like is American Processed Cheese! Which was the only kind I'd ever been fed.

There was a resteraunt near my office, now sadly closed, which did a 'huo guo' (aka pot au fue) which specialised in fungus. You could get 20 different varieties at on sitting. Yummy.

We also get a lot of dried fungi as well, equally delicious when properly cooked.

Wood ear mushrooms (those back thingies) are better fresh.

Don't soak mushrooms in water or wash 'em under the tap. Use a dampish cloth and wipe them. Then cook and eat--or not.

Like Cluin, I was a slow starter at liking mushrooms, I think I was a victim of only having them prepared one way (which I still find revolting) as a child.

You should give them a try sometime Azzizi. Supermarket ones can be OK (and will be safe as you know you are not getting toadstools) but, if the US is anything like the UK, avoid the little button mushrooms as they are so tasteless.

A simple one to try: Get one of the larger ones, peel it, sprinkle a tiny bit of salt on top and grill for a couple of minutes. Eat it on a peiece of buttered toast.

Or if all you can find are button ones, you could try this:

Bit of cornflour and milk and a bit of butter and make a sauce add some lemon juice and sliced mushrooms and stew for a while as the sauce thickens. Again, serve on buttered toast.

Anyone had any..... puffballs.

I have.

They're yummy.

You take a wedge out of the 14-18 inch diameter puffball. Slice thinly, fry till golden brown. Serve with chips!

The next day the puffball will have "healed" itself, leaving a cute little seam where your wedge came from. I picked mine on an old flood meadow.

They are very hard to find though. They seem to grow their fruit only every 3 or 4 years. Which, of course, makes them even tastier!

Mushrooms aren't rubbish, but they grow on it!
I do love mushrooms, nice big ones all fried up... yummmmm yum.
Grandparents had a guide to mushrooms with colour pictures and pictures of skulls by the poison ones. I'd then go identify the ones growing in the area. of course wouldn't let me pick any without supervision.
Azizi, have you ever tried curried mushrooms?
I absolutely hate eggplants, but oddly enough there is one Armenian I know that makes eggplant salad which i find delicious. Odd, I know.

"kits" sold at farmer's mkt.
a bundle of hay or straw imbedded

then there is that wierd

how about truffles?
i went to a mycological
association gathering
at golden gate park once
wnd there were terrariums
with mushrooms growing,
some truffles that they
would sell you a cube of butter that
was sitting in a jar with the truffles'
the butte r would absorb the flavor.

there was also some wonderful chocolate
colored paper made from mushrooms
coffee colored paper too.

my ex use3d to draw pictures on fresh
shelf fungus from trees and when they
dried the picture would be permanent.

then there's those magic ones...

They can be if not handled properly. The thing is, mushrooms should NOT be soaked in water. Commercial mushrooms are no longer grown in manure. Growers utilize another medium. So, to avoid rubberish mushrooms, avoid copious amounts of water. A barely damp cloth will provide all the cleaning they require.

According to Robert Graves, in a piece I read many years back, the term "toadstool" derives from the fact that a toad whan attacked or frightened, excretes from its back the active chemical in "amanita muscaria." Toxic, but not lethal in lesser amounts.

Siberian Eskimos, desirous of the strong hallucinations derived from thei fungus would feed it to reindeer and then drink the urine, the toxins having been filtered out.

Isn't there a much simpler explanation for the toadstool name? IE toads were thought to sit on them?

Weelittledrummer, I'm sure most of the things would be alright without mushrooms, but so much better with them.
