Do you have any faceted 1/2 pint jelly jars? They won't pour much better but they'd look very pretty. You could screw on one of these when it comes time to pour. Fish is in smoking. I hadn't cleaned the rack last time (my bad) and had to scour the shelves and drip pan first, but I gave the fish extra time to form that outer skin and it looks really good - I may make a note to try to wait 10-12 hours and not the usual 8 before starting smoking.
